SPICY YOGURT MARINADE Makes about 1 cup, enough for 1½ - 2 lb. of fillets 1 tsp. ground coriander 1/4 tsp. turmeric 1/8 tsp. ground ginger 1 cup plain yogurt 1/2 tsp. ground cumin 1/4 tsp. ground red pepper 1/8 tsp. ground black pepper Place spices in a small non-stick saute pan and heat for 2 minutes over medium heat to release flavors. Remove spices into a mixing bowl and cool for several minutes. Add yogurt and stir to blend well. Marinate fish for at least 30 minutes but no more than 1 hour. Baste with marinade while cooking. Broil or grill for about 4 minutes per side. |
