PHILIPPINE ESCABECHE (SWEET & SOUR FISH)
Serves 4
2 lbs. Fish Fillet or Steaks
1/2 tsp Salt
1/4 tsp Pepper
1/4 cup Flour
1/4 cup Oil 1 Small Onion, sliced
1 Red Pepper, sliced
1 Green Pepper, sliced
2 Medium Tomatoes, cut into wedges
SAUCE
1/4 cup Lime Juice
2 Tbs Rice Vinegar
1/3 cup Sugar
1/4 cup Water
1 Tbs Cornstarch
2 Tbs Soy Sauce
Combine salt, pepper & flour. Coat fish with flour mixture. Heat a skillet and add oil. Fry the fish until light golden brown on both sides. Remove fish and set aside. Drain oil from skillet. On medium high heat, saute ingredients and add to skillet. Bring to boil, adding fish. Turn to simmer and simmer for 10 minutes. Garnish with tomatoes and green onions.
