Description: There are at least 25-50 different species of Rockfish that we label here as Snapper. The only true Red Snapper is a very expensive fish found in the Gulf of Mexico and Caribbean, so there is a lot of confusion over the issue. Rockfish vary drastically in color from one species to another. All rockfish species grow slowly and are fished heavily which makes the future unknown.

Flesh: Varies from species to species, but most is reddish brown in color to white with mild flavor. Flesh also varies from soft to firm depending on type.
